Hello Faircrest Farms Friends! Happy Chinese New Year!
New to Our Offering — Mini-Kale!
We're excited to announce a fresh addition to this week's harvest: Kale!
With all the sun and warmth we enjoyed last week, our greens really came alive. Our outdoor kale growing under the low tunnel finally produced a beautiful harvest of tender "mini-kale" that is ready to sell — and we even harvested from our covered beds outside the high tunnel, a welcome surprise and a sure sign that the season is waking up!
Mini-kale is sweeter and more delicate than mature kale, perfect for salads, smoothies, or a quick sauté. We hope you love it as much as we do. 
In the Fields
The plants inside our high tunnel are responding beautifully to drip irrigation. This winter we've finally figured out how to run the system off a timer — a game changer that saves us significant time each day. It's one of those small victories that makes a big difference in the rhythm of farm life. 
We're continuing to monitor the beds closely as temperatures fluctuate, and we're encouraged by what we're seeing. Growth is steady, and the soil is happy.
In the Heavens
Did anyone catch the solar eclipse today? Both the Moon and the Sun are in Aquarius — a contemplative, forward-thinking sign. We're hoping those extra-terrestrial forces will continue to bring us the snow and rain the land is calling for. Every drop counts this time of year!  . Happy Chinese New Year!
Gardening Class — Would You Be Interested?
A fun conversation at the dentist's office got us thinking! Rita's dental hygienist asked whether we'd ever consider offering a gardening class — and even shared her contact information to learn more. It planted a seed (pun intended)! 
We'd love to know: if we offered a 6–8 week hands-on, in-the-field gardening class with reference readings this spring, would that interest you? We're thinking 90-minute sessions on Saturday mornings or afternoons.
Please reply to this newsletter and let us know your interest and preferred time. If there's enough enthusiasm, we'll follow up with a more formal survey to iron out the details. This could be something really special — learning together, hands in the soil, right here on the farm.
