Hello Faircrest Farms Friends!

47°F last night! That’s our signal that fall is arriving.

We’re now in a dance with nature—moving warm-weather crops into the high tunnel and solarium while getting our cool-weather crops established outside. And we’re grateful for you—for your orders, your encouragement, and especially your feedback.

A neighbor recently stopped me to ask when we would have more collards. A few weeks ago, he made a special dish of collards and sausage that absolutely dazzled my taste buds. We hear comments like this regularly: “Your produce just tastes different.”

We believe it does. It’s not just about flavor. Freshly harvested food grown in healthy soil provides nourishment, vitality, and a connection to the land and the people who grow your food.

🥬 This Week’s Harvest

My leek experiment has worked! We now have a beautiful crop of leeks that should keep us harvesting for the next several weeks.  Their sweet, savory flavor makes them one of my favorite fall vegetables.  Potatoes are coming soon, as well.

🌙 In the Fields

The moon is descending now, which means it's transplanting time!

We're busy getting our next succession of crops established:

  • 🥒 Zucchini and cucumbers have been transplanted into the solarium for a late-fall harvest.

  • 🌱 New seedlings are ready to go into the ground to replenish our supply of salads and greens.
  • 🌿 We're preparing for the transition from summer abundance to the delicious greens and roots of fall.

🌾 A Visit With Farmer Joseph Lofthouse

This week I had the privilege of visiting Farmer Joseph Lofthouse in Hyrum, Utah.

Joseph is a fascinating farmer, seed saver, author, and world traveler who specializes in developing and saving locally adapted seeds. He even grows seed for chefs in New York City!

He showed me some remarkable tomato varieties, including the Jagodka, a Russian-bred tomato that can produce rich, flavorful red tomatoes weeks ahead of many other varieties.

As a gift, Joseph gave me a Jagodka tomato. I am now drying the seeds for next year's planting.

This is one of the things I love about being part of Utah's farming community.

Farmers sharing seeds, knowledge, and discoveries with one another can bring flavors and varieties to our tables that you will never find in a grocery store.

At the same time, we're working together to figure out how farmers can actually make a living while preserving the knowledge of how to grow world-class vegetables right here in Utah.

💚 Paying Your Farmer a Fair Wage

After visiting many farmers and reflecting on my own four years of experience at Faircrest Farms, I have a much better understanding of what it really costs to grow delicious, naturally grown food in Utah.

I believe farmers and farm crew members deserve a fair wage for the value of the work they provide.

As an owner trying to keep Faircrest Farms financially healthy and sustainable, I'm also navigating inflation, rising fuel and supply costs, and the simple reality that growing food takes a tremendous amount of labor.

So we've made the difficult decision to raise our prices this fall by approximately 15–20%.

We could choose to create a CSA and ask customers to pay for their produce up front. Instead, we've chosen to give you the freedom to order what you want, when you want it. We like that flexibility for our customers, but it means we have to make the economics work through the price of each product.

When you buy from Faircrest Farms, your dollars help pay for:

🌱 Healthy soil and regenerative growing practices
👩🌾 Fair wages for the people who grow and harvest your food
🥕 Fresh, locally grown produce harvested at its peak
🤝 A stronger Weber County food system
💚 Meaningful work and opportunity for people in our community

Thank you for understanding—and for choosing to support a different kind of food system.

🌿 Words of Wisdom

“You can buy honestly priced food or you can buy irresponsibly priced food.”
— Joel Salatin, quoted in Michael Pollan, The Omnivore’s Dilemma (2006)

At Faircrest Farms, we believe the price of local produce should reflect the real work of growing healthy food, caring for the soil, and paying farmers a fair wage.
