Dear Faircrest Farms Friends, Sun in Scorpio | Waxing Moon
Cool, frosty mornings and glowing November sunsets are ushering in the holiday season. Everything is gathered in, and thanks to our part-time team and generous volunteers, the farm is in good shape heading into the long weekend.
This week’s vegetable offerings are in very limited supply: arugula, salad mix, chard, kale, carrots, and turnips. To make sure you get your favorites, it’s best to place orders early Wednesday afternoon.
From the Fields
Winter rhythms have begun. The high tunnel continues to grow beautifully—just more slowly now as the daylight fades. Between the spinach and lettuce you’ll see radish seedlings poking through; we’re giving them another week to establish before harvesting.
We decided to pull the last carrots and turnips before the soil cools too much. Outdoor beds are now tucked in each evening and uncovered once temperatures rise above freezing. The hoops are just big enough to shield the tender greens from the morning frost.
And thanks to the popularity of our sunflower microgreens and pea shoots, we’ve planted a new round. If all goes well, they’ll be ready for market in about three weeks—hopefully becoming a regular weekly addition.
Your Purchases Support Lives Being Relaunched
Every bunch of greens helps support individuals rebuilding after recovery. Through our partnership with Weber Recovery Center and Eos Serenity Lodge, our farmworkers are gaining job experience, confidence, and real-world momentum.
One employer even reached out for a work-verification email this week—we were proud to affirm the strong work ethic they’ve shown here.

Cooking Class, Anyone?
Rita and I have been cooking our way through the seasons—currently reading Animal, Vegetable, Miracle—and it’s reaffirming what we know: the healthiest eating is seasonal eating.
A recent kitchen victory? Kohlrabi leaves—stir-fried with carrots and onions. Absolutely delicious, and amazingly vigorous in this cold weather.
We’re considering hosting a winter–spring monthly cooking class focused on seasonal produce and simple, nourishing recipes.
