Hello Faircrest Farms Friends!
Thanks to a friendly and generous farmer neighbor, we were able to get some much-needed field help this week from Tyson Lloyd of Better Food Farms and his BCS walk-behind flail mower and tiller. Thanks to that teamwork, our cover crop has now been harvested and is composting beautifully back into the soil. The beds are currently occultating — resting under cover so that all that rich organic root matter can digest and feed the earth in preparation for mass transplanting next week. It’s one of those behind-the-scenes farm processes that reminds us how healthy soil truly is the foundation of healthy food.
Weekly Offering
Here’s what we have to offer this week — and new to the table are our beautiful collards! They’ve come in wonderfully and are one of the most versatile greens you can cook with.
Collards are excellent:
- Slow-cooked with ham or smoked meat
- Used as fresh wraps for tuna or chicken salad
- Sautéed with garlic and white beans
- Mixed into pasta dishes like Aglio e Olio
- Folded into frittatas or scrambled eggs
Their rich flavor and hearty texture make them both nourishing and deeply satisfying.
Plant Sale
We had a wonderful pre-Mother’s Day plant sale, and there are still plenty of plants available! We’re now setting them out on tables in front of Faircrest Farms, so when you stop by to pick up your order, you can browse and choose your favorites.
With no threat of frost ahead, now is a perfect time to adopt your plants and get them in the ground. Tomatoes, flowers, herbs, peppers, and more are ready for their new homes.
