Hello Faircrest Farms Friends!
The longest day of the year is now behind us, and with it comes the unmistakable sense that summer has truly arrived. The days are still warm and full of life, but the turning of the season reminds us to savor these precious weeks when the fields are overflowing.
On Monday evening, we celebrated the first fruits of the season at Red Acre Center's Farm-to-Table Dinner held at beautiful Argyle Acres in Eden. Set beside Cold Water Creek in a lush pasture, it was a glorious evening surrounded by the life-force of the land. Faircrest Farms was honored to join many other local farms in contributing to a truly five-star meal. Our zucchini and garlic found their way onto the menu, joining a feast that showcased the abundance of Northern Utah agriculture.
As we gathered with good friends, enjoyed delicious food, and rallied around the cause of strengthening local food systems, we were reminded how blessed we are to be part of this remarkable farming community.
Our Farm Offering
This week's harvest continues to grow!
In addition to our signature salad greens, we're excited to offer:
Green Garlic Bulbs – Young garlic with a mild, fresh flavor perfect for sautéing, roasting, soups, and stir-fries.
Fresh Cucumbers – Our first cucumbers of the season have arrived! Their crisp texture and refreshing flavor are a welcome sign of summer. (Watch for a photo of Farmer Karl proudly holding the season's very first cucumber!)
Fresh Basil – Fragrant and flavorful, ready to elevate pasta dishes, pizzas, salads, and homemade pesto.
Turnips & Bunching Onions – Sweet, tender turnips are back, accompanied by fresh bunching onions that add flavor to almost any meal.
And of course, our zucchini harvest continues to expand each week as the plants hit their stride.
In the Field
The pace of summer farming is accelerating.
Garlic Harvest Complete This week we harvested our entire garlic crop. The bulbs are now curing in the shade, revealing a beautiful range of large, medium, and small heads that will be available in the coming weeks.
Keeping Up with the Zucs and Cucs Zucchini and cucumber plants are producing faster each day. Harvest baskets fill quickly, and the daily picking keeps us on our toes.
Building Healthy Soil We're incorporating finished compost into harvested beds to replenish nutrients and strengthen soil biology for future crops.
Sowing Roots and Fruits Successive plantings continue as we seed carrots, beets, turnips, and additional fruiting crops to ensure an abundant harvest through summer and into fall.
Time to Climb Tomatoes, cucumbers, and cantaloupes are reaching for the sky. Trellising work is in full swing as we guide vines upward, improving airflow, fruit quality, and harvest efficiency.
