Growing Through the Heat, Harvesting with Joy

As part of Rita's and my 39th wedding anniversary getaway, we spent a wonderful morning visiting Chris Pyper at Rustling Aspen Farm in Midway, UT. The next day, we had the chance to shop at his farmers market stand.

It never ceases to amaze me how much can be learned in just a few hours walking another farmer's fields. Seeing how Chris grows, harvests, and presents his produce sparked all kinds of new ideas. We came home inspired and excited to continue improving Faircrest Farms so we can bring you the most beautiful, bountiful, and delicious food in Weber County.

🌱 This Week's Harvest

Summer continues to surprise us!

🥕 Carrots – The first carrots of the season are here! We were delighted to discover they were ready to harvest, and they're wonderfully sweet and crisp.

🌶️ Anaheim Peppers – Mild with just a touch of warmth, these peppers are perfect for chili, fajitas, omelets, roasting, or stuffing.

🍅 Cherry & Slicer Tomatoes – Sun-ripened and bursting with flavor.

🥒 Cucumbers – Cool, crisp, and refreshing during these hot summer days.

🧅 Bunching Onions – A versatile favorite for salads, stir-fries, and grilling.

💐 Fresh Flower Bouquets – A gorgeous assortment of brilliant summer blooms to brighten your table and your home.

🚜 In the Fields

This week's biggest challenge wasn't weeds—it was the heat.

Faircrest Farms recorded a high temperature of 112°F, making it one of the hottest weeks we've experienced. Keeping our lettuce happy has become a daily mission! We're nearly finished weeding and adding compost to the beds, and we're covering pathways with fresh wood chips to help keep the soil cooler, conserve moisture, and reflect some of the intense summer heat.

The good news is that we've prepared for what's next. Twenty trays of seedlings have been hardened off and are ready to plant, ensuring a steady supply of fresh vegetables in the weeks ahead.

New plantings of lettuce, arugula, radishes, and turnips are already on their way.

🌻 Visitors to the Farm

Last evening we enjoyed welcoming the Garden Gals of South Ogden for a tour of Faircrest Farms.

We loved sharing our story and showing what's possible—even in Utah's high-desert climate. Their curiosity, thoughtful questions, and enthusiasm were contagious. Several expressed interest in returning to volunteer and learn more about regenerative farming. We look forward to growing alongside them.

We're excited to welcome Payne Carter to Faircrest Farms.

Payne recently graduated from Weber High School, where she enjoyed participating in FFA. She hopes to explore a career in horticulture, especially working at a nursery, and brings a passion for floral design and agriculture. We're delighted to have her learning and growing with us this season.
