Dear Faircrest Farms Friend,
Despite freezing mornings, our winter beds are thriving—and we’re excited to share this week’s harvest, microgreen updates, and a rare celestial show.

Produce Available – Farm Offerings

Even after a 22°F morning with no sun, our bed covers kept soil temps at a cozy 34°F—just enough protection to keep the greens thriving. This week we have lots of spinach, turnips, and carrots, plus a colorful mix of cool-season staples:

  • Salad Mix (red & green)
  • Arugula
  • Spinach
  • Chard
  • Bok Choy
  • Carrots
  • Turnips (Tokyo White)

From the Field

Our winter microgreen sowing is underway! We’re trying a new basic salad blend of winter sprouts—kale (30%), kohlrabi (20%), broccoli (20%), arugula (14%), and cabbage (15%). It should be ready by December 17th. Next week we expect fresh batches of pea shoots and sunflower microgreens, too.

This mix is both flavorful and vibrant, growing beautifully together and adding a delicious boost to salads, sandwiches, omelets, and smoothies. Arugula brings a gentle, peppery kick.

A fresh load of wood chips arrived this week—perfect insulation for the soil and an invitation for the worms to rise and do their good work. And we’re happy to report that the high-tunnel greens are now producing!

In the Kitchen

Chard and arugula shine beyond a simple salad—they make fantastic pizza toppers! And our jalapeño and Anaheim peppers, combined with tomatoes we froze earlier this fall, are turning out a chili full of rich flavor and warmth.

Cooking Class Update

Our winter cooking class is officially a go! We’re surveying our three current students on timing and comfort level, and more are welcome to join. If you’d like to participate, simply reply to this email. Classes begin in January—an inviting way to cook, learn, and enjoy community on long winter nights.

In the Heavens

Tomorrow, December 4th, brings the last Super Full Moon of 2025—the Cold Moon. Because it coincides with the Major Lunar Standstill (a once-every-18.6-years event), it will soar higher in the northern sky than any full moon until 2042. If clouds allow, we’ll enjoy more than 16 hours of moonlight!
