Dear Faircrest Farms Friends, Winter has officially arrived—but even in the quiet of the season, the light is returning.
This week’s photo captures the first light of a new light year as we cross the winter solstice. As the days begin to lengthen once again, we hope you’ll join us in looking toward the light this holiday season.
New Offerings
Microgreens Salad Mix A vibrant, nutrient-rich blend of winter-grown microgreens that grow beautifully together and taste even better:
- Kale (Red Russian) – 30%
- Kohlrabi (Purple Vienna) – 20%
- Broccoli – 20%
- Arugula – 14%
- Cabbage (Red Acre) – 15%
This crisp mix makes a fantastic base for salads and sandwiches and is also delicious in omelets or blended into smoothies. The arugula adds a gentle kick, while the combination delivers Vitamins K, E, and C, along with calcium, iron, and beta-carotenes—perfect for fortifying your health during the winter months.
A Fresh Tweak to Our Classic Salad Mix We’ve added Bulls Blood baby beet leaves to our traditional salad mix for extra color, earthy flavor, and an added boost of nutrients.
Holiday Farm Hours & Market Reminder
As we move into the holidays, we’re adjusting our schedule to give both people and plants a well-deserved rest.
Market Day moved to: Tuesday, December 23 A great opportunity to stock up on carrots, salad mix, spinach, and microgreens.
Farm Closed: December 24 – January 6
Reopening: Wednesday, January 7
This pause allows our crew to enjoy the holidays and gives the farm time to cross the winter solstice—slowly turning from darkness back toward light.
Note: We will not be open next week, so please stock up if you need to.
On the Farm
Things are quiet and peaceful as we welcome the holidays. Root radishes are coming along nicely, and the farm is resting beneath shorter days and longer nights.
In the Heavens
The jet stream has brought us unusually warm weather. While we’re grateful for gentle conditions, we’re also hoping for cold temperatures and snow—nature’s way of storing water in the mountains for the growing season ahead.
