Dear Faircrest Farms Friends, Even as the days grow shorter, life continues to rise quietly from the soil at Faircrest Farms.
We’re savoring the sprouts this week—especially the pea shoots, which are Rita’s favorite. Tender, sweet, and full of life, they’ve been brightening our winter meals and reminding us how much vitality can come from even the smallest greens.
New This Week! Say hello to Rambo Radish Sprouts —vivid red with just the right touch of spice to wake up your December dishes. And despite the darker days, this week’s harvest continues to amaze us: 13 full bags of salad mix came straight out of our high tunnel. Winter abundance is real!
Holiday Farm Hours & Market Update
As we move into the holidays, we’re adjusting our schedule to allow both people and plants a well-deserved rest.

A great time to stock up on carrots, salad mix, spinach, and microgreens!
- Farm Closed: December 24 – January 6
- Reopening Wednesday, January 7
This pause gives our farm crew time to enjoy the holidays and allows the farm itself to cross the winter solstice—slowly turning from darkness back toward light.
From the Field
The mild weather has been a gift. We’re transplanting spinach and lettuce, and we’ve been adding biodynamic preparations to our large compost pile—investing now in the soil health that supports future harvests.

Did you catch the Geminid Meteor Shower Saturday night? We spotted three shooting stars around 10:00 pm. Known as the most active and easiest meteor shower to see, it felt like a quiet gift from the cosmos.
