Dear Faircrest Farms Friends, Even in December’s chill, the farm is bursting with fresh life—especially in the microgreen trays, which are thriving beyond expectations..
Those little sprouts continue to amaze us with their vigor and vitality—proof that even in the shorter days of December, good things keep growing!
New & Noteworthy This Week
Sunflower microgreens and pea shoots are now available in greater quantities!
We asked for your thoughts on the sunflower microgreens, and your feedback made our week: “Truly fab! One of my fav things y’all have grown… yummmmm!”
Thank you! Based on that input, we’re now offering 4 oz bags for $4. These smaller portions help keep the greens fresher—and make it easier to use them up quickly.
More microgreens are on the way, too:
- Rambo radishes. (root family nutrients and exciting flavor!)

Salad mix. (a mix of 5 greens full of vitamins)
Both should be ready within a week or two. We currently have 22 trays in their final stages!
Sprouts are fantastic in salads, piled on sandwiches, or sprinkled on warm winter soups for a fresh, nutritious lift.
In Low Tunnels
The Asian greens are looking good—large bok choy and tender Tokyo Bekana, which tastes much like a mild romaine. The collards have perked up with the recent warm spell and are looking strong again.
Out in the Fields
Even in the cold and darkness, the cover crops are thriving underground, pushing roots deeper and keeping the soil alive. Our largest compost pile of the season is almost ready for its biodynamic preparations and winter covering. And yes—the next load of wood chips is on its way so we can blanket Mother Earth and give those earth worms some refuge!
Winter Kitchen Inspiration
Here’s what we’ve been cooking using farm ingredients and fall preserves:

Butternut squash tossed with basil pesto over egg noodles

Greek lemon chicken with baked turnips, carrots, and potatoes
* Lentil soup with carrots, topped generously with sprouts
- Fresh veggie trays with sliced turnips and sweet, tender carrots
Simple, nourishing dishes remind us how good winter eating can be.
In the Heavens
The recent Supermoon was a beautiful sight! We’re just 11 days from the Winter Solstice, and the plants can feel it—especially the lettuce and bunching onions, which are eagerly awaiting the return of the light.
